Peanut Butter Sandwich Cookies
Makes 2 dozen cookies

Cookie recipe adapted fromĀ Smitten Kitchen

For the cookies:
1 1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup butter, softened
3/4 cup sugar
1 egg
1/2 teaspoon vanilla
1/3 cup cocoa
coarse sugar for sprinkling

For the filling:
1/4 cup creamy peanut butter
1 cup powdered sugar
3 tablespoons butter, browned

In a small bowl whisk together the flour, salt and baking powder. In a larger bowl combine the butter, sugar, egg, vanilla, and cocoa until smooth. Add the flour and beat until combined. Gather the dough into a ball, wrap in plastic, and chill for at least 30 minutes.

When you are ready to bake, preheat your oven to 350 and line a baking sheet with parchment paper. Roll out the dough to about 1/4 inch thick, stamp out cookies and sprinkle with sugar. Bake the cookies until slightly puffed (about 8-10 minutes). While cookies are cooling, combine the ingredients for the filling. Spread a little filling on half the cookies, and sandwich with the remaining half.
