I wanted to title these browned butter and peanut butter sandwich cookies, but that sounded weird. So did peanut and browned butter sandwich cookies. So I settled on highlighting only the peanut butter up top – since it is really the key – but the browned butter in the filling really adds flavor. You could definitely use non-browned butter too, but it takes like 5 seconds. Come on! Do it!
Peanut Butter Sandwich Cookies
Makes 2 dozen cookies
Cookie recipe adapted from Smitten Kitchen
For the cookies:
1 1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup butter, softened
3/4 cup sugar
1 egg
1/2 teaspoon vanilla
1/3 cup cocoa
coarse sugar for sprinkling
For the filling:
1/4 cup creamy peanut butter
1 cup powdered sugar
3 tablespoons butter, browned
In a small bowl whisk together the flour, salt and baking powder. In a larger bowl combine the butter, sugar, egg, vanilla, and cocoa until smooth. Add the flour and beat until combined. Gather the dough into a ball, wrap in plastic, and chill for at least 30 minutes.
When you are ready to bake, preheat your oven to 350 and line a baking sheet with parchment paper. Roll out the dough to about 1/4 inch thick, stamp out cookies and sprinkle with sugar. Bake the cookies until slightly puffed (about 8-10 minutes). While cookies are cooling, combine the ingredients for the filling. Spread a little filling on half the cookies, and sandwich with the remaining half.

Love your blog 🙂 So fun to see people start doing amazing things 🙂
thanks Megan!
I too am excited to discover your blog! Those cookies look amazing. And as a native Brooklynite who has lived far away for a while, I share your love/hate relationship with the city, your opinion that the borough is “full of awesomeness,” and your love for all things with butter and leggings 🙂 Happy baking and blogging!
Love this! Not only do the cookies look amazing, but the packaging looks so cute and creative! These would be adorable and delicious wedding party favors!!!
Delicious! So quick and simple. I did halve the sugar in the peanut butter filling and then add flour/cornstarch dissolved in water so the filling wouldn’t be so watery.
