Have you jumped on the cocoa nib bandwagon yet? If not, I urge you to find one to hop onto because cocoa nibs are crazy good.

They are the sort of product I can imagine making claims like “swirl them into your morning oatmeal to curb your chocolate cravings all day LONG!” or “toss them into your favorite salad instead of your usual boring pecans for an unexpected burst of flavor!” or “perfect for snacking – enjoy them by the handful straight out of the bag!”

Every time I hear this phrase “by the handful straight out of the bag” as an advertisement for snacking I always think to myself, isn’t “by the handful” the definition of snacking? How is that an acceptable hook? When have you ever put four chips on a plate and settled down in front of the TV for a nice long afternoon of enjoyable snacking. I can guarantee never.

Cocoa nibs are an exception because I am telling you that I could probably eat them by the handful straight out of the bag. Cocoa nibs are what you think healthy chocolate should taste like. I mean we all know we should have a thimble full of red wine and a small square of dark chocolate everyday for the antioxidants but let’s just say that a handful of cocoa nibs makes the açaí berry look like a Taco Bell.

All jokes aside, they are wonderful in baking. They are not too sweet, and almost a cross between a chocolate chip and a nut if you can wrap your brain around that. I made these super simple oatmeal cookies and replaced the chocolate chips with cocoa nibs and now they are practically guilt free. Just kidding! But they are chewy in the middle, crispy on the outside, full of oaty goodness and bursting with chocolate flavor!

Oatmeal Cocoa Nib Cookies
Makes about 2 dozen cookies

1 stick (8 tablespoons or 113 grams) butter, room temperature
1/2 cup (100 grams) brown sugar
1/2 cup (112 grams) sugar
1 egg
1/2 teaspoon (2.5 ml) vanilla
1 cup (125 grams) flour
1 cup (140 grams) old-fashioned rolled oats
1/2 teaspoon (2 grams) baking soda
1/2 teaspoon (2 grams) baking powder
1/2 teaspoon (2 grams) salt
1 cup (120 grams) cocoa nibs

Preheat oven to 375 and line a baking sheet with parchment. In a large bowl cream together butter and sugars until light and fluffy. Add egg and vanilla and mix until combined. In a medium bowl whisk together flour, oats, baking soda, baking powder, salt and cocoa nibs. Add the dry ingredients to the butter mixture in several additions until the flour is incorporated. Portion out dough using a small scoop and place on the prepared sheet about 2 inches apart. Bake for 8 minutes or until the edges are just slightly browned. Transfer to a rack to let cool completely.

wow there. Now, I have no idea what cocoa nibs are. Seriously. We don’t have them in Belgium . Pretty sad for the country that; like, invented chocolate, right? (well, we might have). So I feel it is imperative they should go my way. (Please)

also my family is addicted to chocolate and even if I bake something very non-chocolatey I sneak in some bits in at least half the batch just to make sure it’ll all be gone. cocoa nibs seem like a good way to do this

also I’m almost out of red nail polish. NOOOOO!

I’ve been meaning to jump on the cocoa nib wagon for months and month but for some reason I always reach for the chocolate chips instead. These cookies look delish though and I can’t wait to try the recipe!

I’m due to have a baby next week (my first, yikes!) and I guess that’s the most exciting thing on my agenda. I had to leave Brooklyn for my home country (Iceland) to have it (no U.S. health insurance) and I miss BK like crazy. Can’t wait to get back in November.

I have to admit – I’m another one of those commenting for the chance to get that lovely prize (the tote bag sounds absolutely darling!). I also have to admit this is my first time hearing about cocoa nibs – something that can be substituted for chocolate and is healthy – must be good!

Summer is still far from over here in Tokyo so I can’t really sound all nostalgic about my favourite summer moment yet. But, if I had to choose from all that’s happened so far, I’d probably say it was buying an ice-cream maker, labouring over what flavour to make, and watching it churn away. Nothing beats the joy of home-made ice-cream, especially for the first time, and especially in this humid, hot summer!

Cocoa nibs always remind me of the one guy in our design major that was very weird and also very into Kombucha, but I have made an effort to not let this taint my perception of their subtle cocoa-y goodness. I travel often for work, but usually I find myself in Chicago or the northeast in January or February – not so fun. This summer I was actually able to enjoy many beautiful days in both Chicago and Boston and thought – ah, this is why people love these cities! I always make a point to find incredible food = but it’s nice to have the gorgeous weather to go along with it.

My summer memory and fall anticipation both involve canning seasonal fruit.

Nothing says “summer” quite like those delicious little gems, wild Maine blueberries, and I put up jars and jars of them in light syrup and, of course, some blueberry jam.

The apples are coming in early this year, so it won’t be long before I’m making applesauce and its byproducts, apple butter and apple jelly.

Back to school shopping. It may seem nerdy but getting some new outfits always gives me a little boost of confidence just in time to head back. These cookies look fantastic and I can’t wait to give them a try. Cocoa nibs also sounds like a good way to sneak a nutty taste into a cookie without the nuts. My happiest summer memory? Browsing – or grazing, rather- the farmer’s market in Great Barrington with my grown son and his girlfriend. Cheeses, cauliflowers in three colors, yellow mushrooms, heaps of fresh bread, and fuzzy peaches. We overbought, and guess what, it all got eaten! And of course it was good, very good.

favorite memory of the summer:
sipping sparkling homemade lemonade in a beautiful san francisco apartment in the mission district with a gorgeous view of twin peaks. it was a perfect evening among friends at a lovely dinner party- best of all my tres leches coconut cake that i brought was a hit!

My favorite memory of this summer was accidentally disturbing a nest of skink eggs in my garden compost pile, then getting to see the baby skinks a couple weeks later. I was so worried that mama skink might have abandoned the eggs after I disturbed them!

My favorite memory this summer was making 200+ cupcakes for my friend’s wedding! This was my biggest baking challenge ever, but I had a ton of fun. A close runner up was starting a small garden in the backyard… we are now overwhelmed with zucchini and tomatoes, not a bad problem to have 🙂

This summer’s favourite memory has to be our long weekends spent at Prince Edward County in Ontario hanging out at the beach watching my 5 year old and his dad build sand castles -Gaudi style.

The oatmeal cocoa nib cookies look absolutely delicious!!! Can’t wait to try your recipe. My favorite summer memory from this summer is from the beautiful island of Santorin, Greece. Every year we visit family in Greece and pick a new island to visit. This year we met friends on the island of Santorini. All 14 of us rented a catamaran and spent an entire day on the boat. We docked and went swimming at different beaches and saw the amazing sunset on the boat! Unforgettable !!

My favorite memory this summer was a Sunday evening BBQ with friends, we did steak, tuna and vegies on the grill, lots of yummy sides and a great white wine sangria was served . The evening was warm, we strung lights overhead, the playlist was perfect, we laughed and talked til late into the evening. It was so much fun…we did it three more times over the summer.
One of my friends was thanking me and exclaiming about “how much work I did”, but it never seems like work when you are cooking fo people you love and enjoying their laughter and company,

Hi! I just heard about your site through a friend whom you met on your trip to Seattle. I was excited because you have ‘butter’ in your web address but then I was giddy when I saw your latest post for oatmeal + cocoa nib cookies! Oatmeal chocolate chip cookies are my FAVORITE and these sound so decadent! I threw a tea party this summer for my girlfriends and these would have been great have! Guess I’ll have to another party 🙂

My favorite memory of the summer…kids eating otter pops & chocolate milk while on vacation at the river. Then coming home and sampling BMUB’s delicious goods. baking truly does make friends!

The best thing about fall coming is THE FOOD. The squash, the pumpkin seeds, cinnamon, nutmeg, apple cider, warm soups…. YUM! I love it all.

Yes, sparkling sugar makes everything better, I put it on freshly baked blondies and served them at a small tea gathering for friends. The humble blondies , as a result, looked quite fancy!

I am so excited the fall season is almost here. My favorite part is taking a walk in the evening at a local park and breathing in all the wonderful scents of the trees, the grass, and the fallen leaves… thank you for the generous giveaway and the beautiful pictures.

Great early fall give away and the cookies sound delicious. My favorite memory of the summer was picking up my boys from their summer camp in northern Ontario. They go away for the entire summer to spend it running rapids and living outdoors. The look on their faces when they see us for the first time in six weeks is priceless.

My fav summer memory is of yesterday evening, when our power finally came back on after 5 days of New Orleans August heat and humidity. Thanks, Hurricane Isaac. We celebrated at a tiny french restaurant with champagne and cheese boards with incredible horseradish fig mustard!

These cookies look so perfect – oatmeal cookies are my favourite and I usually think its sacrilege to have anything but raisins in them, but I’m intrigued by the cocoa nibs.

Lots of great summer memories, but I secretly can’t wait for fall since my husband and I are taking our first vacation to Napa and San Francisco!

Fave memory: getting hitched and seeing your pretty face out in the crowd! What I’m looking forward to is all the pumpkin recipes that I can start making without feeling like a weirdo. And that the wedding diet is over so I can start looking on here again more often!
