Nectarine Buttermilk Cake

Adapted from 101 Cookbooks

2 1/2 cups flour
1 tablespoon baking powder
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
1 cup buttermilk
1/4 cup butter, melted and cooled a bit
1/2 a vanilla bean, seeds scraped
1/2 teaspoon vanilla extract
zest of 2 lemons
2 nectarines sliced
raw sugar for sprinkling

Preheat oven to 400F degrees. Grease and line bottom of one 10-inch tart pan with parchment paper.

Combine all the dry ingredients in a large bowl. In a medium bowl beat the eggs with the buttermilk. Then whisk in the melted butter, the vanilla bean seeds, extract, and the lemon zest. Pour the buttermilk mixture over the flour mixture and stir until just combined.

Spread the batter in the pan, and arrange the nectarine slices on top of the cake. Sprinkle with sugar and bake for 30 minutes, or until a toothpick comes out clean. Put on a pretty plate and call it breakfast.
