root beer float popsicles

To bridge the gap between summer and fall, I ate a root beer float popsicle wearing a scarf then chased it with a pumpkin cookie.

My taste buds at first were like, what up? Then they were like thank you, since both of those things were delicious.

It is a scientific fact that if you make both root beerΒ and vanilla ice cream you must make root beer floats, and in popsicle form they just may be better than in a glass.

Root Beer Float Popsicles
Makes 6-8 popsicles

1 cup of root beer
1 – 2 cups of vanilla ice cream

If you are using store-bought root beer, open the bottle the night before you make these so that there is no carbonation. If you made your own syrup then mix 1/2 cup of syrup with 1/2 cup of water instead of seltzer. Scoop a few spoonfuls of ice cream into each mold and fill with root beer, leaving about 1/2 inch at the top. They will expand a bit in the freezer. Insert popsicle sticks and freeze until solid.

at first i was like, oh, “if you make your own root beer,” no big deal. but then i was like THERE IS A LINK TEACHING YOU HOW TO MAKE YOUR OWN ROOT BEER.

Do you think if you addedrootbeer schnapps as well they would still freeze?

Oh I am booze-minded for sure! I haven’t tried that yet, but I think that if you added a tablespoon or so to the rootbeer it should be fine. Let me know how it turns out!

I think it would make for a more creamy-flavored root beer popsicle. If you make them that way, I’d love to hear how they turn out! The best part about using ice cream is the vanilla ice cream bites and the frozen root beer! πŸ™‚

Braved Bed Bath & Beyond just to get popsicle molds so I could try this recipe! They are in the freezer now…will let you know how they turn out. Thanks, Lillie! Really nice site.

I had a random bottle of root beer in my pantry and made the popsicles with my homemade vanilla ice cream that I had and the results were Great! So easy and husband loved them, too
